The Grilled Eggplant Recipe

4 Servings
1 large eggplant
3 large tomatoes, to match the diameter of the eggplant
0.4 lbs Bulgarian feta, crumbled
1/2 cup fresh basil leaves
juice of half lemon
2 garlic cloves
½ extra-virgin olive oil
Kosher salt
Freshly ground black pepper to taste


Cut of the eggplant crosswise into ½” thick rounds. Lightly season them with salt and leave them for 30 minutes on a side to let water to come out of the eggplant.
Once ready drizzle some olive oil on top of each slice and grill them on a lightly oiled grill rack for 2 -3 minutes each side.
Blend the basil leaves with 4 tablespoons olive oil, 2 garlic cloves, lemon juice and 1 teaspoon salt in an immersion blender until smooth.
Cut the tomatoes crosswise to 1/4” thick rounds.
Lightly oil the baking pan. Arrange 4 eggplant rounds side by side. Spread 1/2 tablespoon of the basil-garlic mixture on top of each one, then generously sprinkle feta crumbs. Top each with tomato rings. Add another layer of eggplant, basil spread, feta and tomato rounds and top with the rest of the crumbled feta.
Preheat the oven to 400F.
Drizzle some olive oil on top of each stack and bake for 15 minutes.

Izgleda slastno, pa čeprav ne maram melancanov.

Sestavine
40 dag krompirja

25 dag bučk

25 dag paradižnika

25 dag svežih šampinjonov

1 dl kisle smetane

1/2 dl mleka

5 dag nastrganega sira

ščepec popra, timijan, rožmarin

drobec masla

2 vejici sesekljanega peteršilja



Priprava

Krompir olupimo in narežemo na tanke rezine. Bučke in paradižnike operemo in z lupino vred narežemo na kolobarje. Šampinjone očistimo, narežemo in popopramo.

Zelenjavo solimo in naložimo v pomaščen pekač v zaporedju: krompir, paradižnik, bučke, šampinjoni, dvakrat eno ob drugem.

Smetano, mleko, sir in druge naštete sestavine zmešamo v tekoč preliv. Prelijemo musako in 50 do 60 minut pečemo v pečici, ogreti na 180–200 °C.



Namig: Olupljen in narezan krompir do polovice skuhamo v slanem kropu in odcedimo. Čas pečenja v pečici se bo zmanjšal za polovico.

1 kg jajčevcev (4 veliki)


25 dag paprike


30 dag paradižnika


20 dag sira


4 stroki česna, 4 vejice peteršilja, 2 ščepca majarona


4 žlice olivnega olja, sol



Priprava


Jajčevce vzdolžno narežemo na nekaj milimetrov debele rezine. Zarežemo samo do peclja, da dobimo »pahljače«. Za 20 minut jih namočimo v vodo, v katero smo kanili malce mleka. Nato jih popivnamo. Če ne utegnemo, pa namakanje ni nujno.Vključimo pečico in pripravimo ostalo zelenjavo. Papriko narežemo, jo posebej popečemo na olju in rahlo solimo. Paradižnik narežemo na tanke kolobarje, solimo in potresemo z majaronom. Česen in peteršilj sesekljamo. Tudi sir narežemo na rezine.Jajčevce odcedimo, posolimo in nato med rezine vlagamo plast česna in peteršilja, plast paprike, plast paradižnika, plast sira, nato pa zaporedje ponovimo. Jajčevce položimo v pomaščen pekač, premažemo z olivnim oljem in jih 30 minut pečemo na 200–220 °C.

Jaz samo vem, da jih je dobro dat v pečico pečt in nato not v juho vrečt. Ne vem pa, če jih še s kakšnim olivnim oljem/česnom/zelišči predhodno, preden gredo v pečico, prepariraš.

Ta je najboljša. :evilgrin:

Jaz sem včeraj naredila eno krepko paradižnikovo juho (za hitrejše okrevanje pa to :D ).

Sestavine (meni je prišlo nekje 2, 5 l juhe, sem delala bolj na uč):
8 manjših zrelih paradižnikov
Pol rdeče paprike
1/4 bele paprike
Mal čebule
Par strokov česna
Sol, poper
Olivno olje
Mutti pasirani pelati

Približno liter jušne osnove (jaz sem dala zelenjavno) oz. po želji, toliko, da dobite željeno gostoto

Paradižnike sem oprala, narezana na četrtine in dala v manjši pekač obložen s peki papirjem. Enako papriko (narezala na večje koščke). Dodala čebulo (spet na večje koščke) in neolupljene stroke česna. Nato sem samo posolila in popoprala in pokapala z olivnim oljem. Dala v pečico, segreto na 180°C in pekla enih 50 minut. Ko je bilo pečeno sem samo izluščila česen (ko je pečen samo zdrsne iz lupine), dodala še nekaj sveže bazilike in vse skupaj spasirala s paličnim.

Nato sem na olivnem olju posteklenila čebulo in ene dva stroka česna, dodala tisto, kar sem spasirala, Mutti pelate in jušno osnovo (mal jušne osnove sem porabila že prej, da sem lažje spasirala s paličnim). Še dodatno solila (ker se mi je zdelo potrebno, ni pa nujno) in dala še ful bazilike. :D
Zraven paše žlica kisle smetane. :)

Tudi fantu je bila božanska, tako da - definitivno jo bova še jedla. Njam. Pa dokaj enostavna je oz. hitro je narejena.
