Honey Cloud Pancakes

To make a single serving pancake you will need:
  • 1 large egg and 1 egg white
  • 1/4 cup of warmed milk
  • 1/4 cup of flour (plain will do, I used 00)
  • 1 pinch of salt
  • 2 teaspoons of honey
  • 1 dash of vanilla extract
  • 1 tablespoon of butter
  • Soft fruits
  • Honey
How to make them:
  • Heat the oven to 200°C (which I gather is around 392°F)
  • Heat a small 6″ oven proof frying pan
  • In one bowl whisk one egg white until it is white and peaky
  • To make the main batter, in another bowl, mix the the other whole egg with flour, salt, honey, and vanilla then whisk in the warm milk
  • Gently fold the egg white into the batter with a metal spoon
  • Melt one tablespoon of butter in the hot pan
  • Pour the batter in and cook on the hob for a few minutes until starting to set at the very edge
  • Sprinkle some fruit on top
  • Bake the whole lot in the hot oven for 7 minutes until puffed up and golden
  • Drizzle with honey
^ Te sem že parkrat naredila, ampak itak naredim maso za več kot eno. Se mi pa zdi eno jajce + beljak čisto preveč/eno.



Lemon ricotta pancakes

Makes: 8 Pancakes


Ingredients:

1-3/4 cups all-purpose flour
1 tablespoons baking powder
1 teaspoons Kosher salt
1-1/2 cups buttermilk
2 eggs
1 teaspoons vanilla
2 tablespoons vegetable oil
2 cups fresh ricotta cheese
4 tablespoons granulated sugar
2 tablespoons lemon zest (minced)
2-1/2 tablespoons vegetable oil



Directions:

Place the flour, baking powder and salt into a mixing bowl. Stir all of the ingredients together until evenly combined. Set aside.
Pour the buttermilk into another mixing bowl. Add the eggs, vanilla and oil into the bowl. Add the ricotta cheese, sugar and lemon

zest into the bowl with the buttermilk. Using a wire whisk, gently stir the ingredients together until evenly combined. Add the flour
mix into the bowl with the buttermilk and ricotta cheese. Continue to fold the ingredients together until evenly combined with a few
small lumps remaining in the batter. Do not over mix the batter.

Heat 1/4 teaspoon of vegetable oil on a griddle or in a large non-stick pan over low heat. Using a 4 ounce ladle, pour the batter onto
he griddle or into the non-stick pan, forming one pancake that is 6″ in diameter. Cook the pancakes for approximately 2-1/2 minutes or
until the edges begin to dry and puff up with little air bubbles will start appearing over the top surface of the pancakes. Flip each pancake
over and continue to cook for another 1-1/2 minutes or until done.

Jaz sem zadnje čase spet obsedena s palačinkami in sem malo brskala za različnimi recepti, fintami.

1. Palačinke je najbolje pečt v tistih starih železnih ponvah (ne teflonskih!)
2. Ponvo na debelo premažite z maslom (prva palačinka bo taka maslena, ampak vsaj naslednjih 10 bo popolnih - ne rabite pol nič več dodajat masla ali olja)
3. Preden začnete pečt, ponvno res dobro pregrejte, da ko date roko nad njo, puhti vročina. Ampak ogenj nastavite na srednjo moč in tudi pečite jih na srednji.
4. Preden jih spečete, pustite testo počivat! Vsaj kake pol ure, če ni časa, tudi 15min naredi svoje.

To so res štiri stvari, ki naredijo svoje. Meni, odkar upoštevam to, vedno ratajo popolno, tako da jih zlahka obračam tudi v zraku. :cool:

Joj, jaz pa ne prenašam neteflonskih ponev. Obračam jih pa tudi jaz obvezno v zraku. -)

Saj če vse ostalo narediš tako kot treba, dvomim, da je bistvena razlika.

Sem se pa v Kanadi naučila, da oni ločijo pancakes, ki so tiste tipične ameriške (male in debele)

in pa crepes - to pa so take, kot jih pogosto pečejo npr. na Hrvaškem, tiste ultra tanke in velike

No, tiste štiri točke, ki sem jih zgoraj navedla, se nanašajo na crepes, tako da ne vem če enako velja za oboje.

Jaz palačnike rečem tem na spodnji sliki, če pa greš po mestih v tujini pa tako so to crepes. One zgornje tudi kdaj naredim, in jim rečem american pancakes.

Pri ameriških je najbolj pomembno, da masa ni preredka, drugače ne pridejo take puhaste, se kar sesedejo.
