They’re surprisingly light, having no butter or oil, nutty with rolled oats and spelt flour, sweetened with agave syrup or honey. They may be the most appealing “healthy” muffin I’ve come across.
SOPHIE DAHL’S PEAR MUFFINS
Make 12 muffins
2 tsp baking powder
1 tsp baking soda
1 tsp ground ginger
1 tsp ground cinnamon
1/4 tsp freshly grated nutmeg
1 1/4 cup spelt flour
1 1/2 cup rolled oats
1/2 tsp salt
1 cup pear puree (I just mashed up a musy pear; Miss Dahl uses organic baby food)
4 egg whites, lightly beaten
1/2 c plain yogurt
3/4 cup agave or honey
1 firm pear, peeled, cored, and cut into a small dice
3/4 cup chopped walnuts
OPTIONAL: 1/4 to 1/2 cup crystalized ginger, chopped
Oil for greasing the muffin tins
Extra pear for decoration on the top of the muffins
NOTE: original recipe called for 3/4 cup raisins, which I generally do not like, but I stuck a few in a and they were quite good. They can also be frozen, well wrapped, and toasted to reheat.
Preheat over to 375°
In a medium sized mixing bowl, add all the dry ingredients (baking poweder and soda, ginger, cinnamon, nutmeg, spelt flour and oats). Stir to blend and make a well in the middle.
Lightly beat the egg whites until they are foamy and hold a bit of their shape.
Add the yogurt, pear puree, and honey/agave to the bowl with the flour mixture and sir to combine. Add the egg whites and gently fold into the batter. Add the diced pear, walnuts, and ginger or raisins if using. Mix briefly to incorporate.
Spoon the batter into muffin tins lined with cupcake liners, or use parchment paper cut into squares. If you prefer to bake strait into the muffin tins, grease them with a bit of oil before.
Fill each muffin tin 3/4 of the way up. Bake for 25-30 minutes. The tops of the muffins will brown slightly, but the insides will remain moist.

- 200 g navadni jogurt- 1.6 MM
- 100 g polnozrnata moka
- 60 g sladkor
Yes, it can happen so quickly. Life as we know it can change in a blink of an eye. Unlikely friendships can blossom, important careers can be tossed aside, a long lost hope can be rekindled. Still, we should be grateful for whatever changes life throws at us. Because all too soon, the day will come when there are no changes left.

- 150 g moke
- 100 g sladkorja
- 2 čajni žlički pecilnega praška
- polovico čajne žličke soli
- 1 zžvrkljano jajce
- 120 ml mleka
- 50 ml rastlinskega ali še bolje kokosovega olja
- 250 g mešanih borovnic in malin
- 50 g na koščke narezane bele čokolade
- pest mandljev
- mleti orehi ali kokosova moka po okusu
Pečico segrej na 200°C. V veliki posodi zmešaj moko, sladkor, pecilni prašek, cimet in sol ter v sredino mešanice naredi jamico. V manjši posodi zmešaj jajce, mleko in olje ter tekočo mešanico prilij suhim sestavinam. Vse skupaj dobro premešaj, dokler ne dobiš gladke mešanice. Previdno dodaj še borovnice in maline, na drobne koščke narezano belo čokolado, pest mandljev in kokosovo moko po okusu. Rahlo premešaj, da se sestavine razporedijo po mešanici.
Muffine peci 20 do 25 minut. Če so pečeni, preizkusiš tako, da v muffin potisneš zobotrebec. Potegni ga ven – če je čist, so muffini pripravljeni!

250 g gladke kamutove,pirine ali pšenične moke
1 pecilni prašek iz vinskega kamna
sol, poper
žlička drobno narezanih rožmarinovih iglic
300 g gostega, polnomastnega navadnega jogurta
80 ml olijčnega olja
50 g izkoščičenih, drobno narezanih črnih oliv
1 jajce
100 g sira feta, narezanega na majhne kocke
Pečico ogrejemo na 170 stopinj.
Posebej zmešamo moko, pecilni prašek, rožmarin, sol in sveže zmlet poper, posebej pa jogurt, olje, olive in jajce.
Suhe in mokre sestavine na hitro zmešamo skupaj.
Pekač za mafine dobro namastimo z maslom in posujemo z moko. V vsako posodico za mafin nadevamo veliko žlico testa. Na testo položimo nekaj kock fete in prekrijemo s preostalim testom.
Mafine pečemo 25 minut. Pečene ohladimo in jih shranimo v neprodušno zaprti škatli v hladilniku.

Tej so zakon, preverjeno, meeehki (ne samo 1uro zatem ko pridejo iz pečice) in osvežilni, lahki, ker so s skuto. Naslednjič poskusim skuto nadomestit z jogurtom.
Mango Lemon Ricotta Muffins
2 cups all-purpose flour
½ tsp baking powder
½ tsp baking soda
¾ tsp salt
1 cup granulated sugar
zest of 1 lemon
½ cup unsalted butter, room temperature
1 cup ricotta cheese
1 large egg
1 tbsp fresh lemon juice
1 tsp vanilla extract
2 fresh mangos, diced
Preheat oven to 350 degrees. Line 12 muffin tins with paper liners.
In a medium bowl, mix together flour, baking soda, baking powder, and salt.
Pour sugar into a small bowl and zest lemon into it. Use a fork to mash zest into sugar.
In an electric mixer, beat together butter and lemon zest sugar until creamy. Add ricotta and beat until smooth. Beat in egg, lemon juice and vanilla extract.
Add dry ingredients and mix until just blended. Divide half of the batter into the 12 muffin cups. Top muffins with diced mango, and use the rest of the batter to fill the cups and cover the mango.
Bake for 20 minutes, until tops are slightly golden. Let cool for 5 minutes.
