Najrajši imam kar navadne, tanke in da niso preveč oljnate. Jaz jih delam kar iz navadnih sestavin, včasih jih edino pečem na kokosovem olju.
Mi pa na palačinke paše vse živo: med, različne marmelade (borovničeva, jagodna, marelična..), kisla smetana + kakav, nutela + banana ali jagode, poštokane jagode in lahko tudi sladoled zraven, maline, včasih si jih prelijem tudi kar z jogurtom.
Na vsake toliko časa mi zapašejo tudi take s sirom in salamo in še kakšnimi drugimi dodatki...naredim čisto normalno maso, samo, da ne sladkam in potem gor dam še sir in salamo, prepognem in še malo popečem, da se sir stopi.
Tudi ameriške sem že delala, mi pa niso toliko dobre kot navadne. Te pa jem izkjučno z medom ali pa jogurtom.

Ali pa domača slivova marmelada in nasekljani orehi, najboljša stvar na svetu.
Ameriške pa odvisno od recepta, nekatere so bolj biskvitaste in suhe, druge pa bolj mokre; slednje najraje jem s PB (ampak obvezno tisti, ki ima notri koščke arašidov) in javorjevim sirupom, te biskvitaste pa - o, kako preseneteljivo - z Nutello.

ČAS PRIPRAVE: 5-10 minut
ČAS PEKE: 10-15 minut
Za 10 mini palačink.
SESTAVINE:
- 2 jajca
- 10 zravnanih žlic moke
- 1 vrečka pecilnega praška
- 10 žlic mleka
- 1 zravnana žlica sladkorja
- 1 žlica vanilijevega ekstrakta
- 1/2 čajne žličke soli
- 1-2 žlici masla
Za preliv:
- 2 pesti borovnic
- 5 žlic medu

OPIS PRIPRAVE:
Vse sestavine razen masla premešamo v posodi. Maslo na majhni temperaturi stopimo in ga prav tako primešamo v preostale sestavine. Ponev segrejemo na srednjo temperaturo (6/9) in vanjo zlijemo krogec zmesi v velikosti dlani. Ko se na vrhu zmesi začnejo pojavljati mehurčki jo obrnemo. Ne obremenjujte se že zmes malce pljuskne okog palačinke pri obračanju. Postopek ponavljamo dokler nam zmesi ne zmanjka.
Med postopkom v manjšo posodo zlijemo med in dodamo borovnice. Vse skupaj premešamo in položimo na vroč štedilnik. Ko zmes zavre ( med gretjem je ne mešamo ) jo odstavimo. Takšno potem postrežemo prelito čez palačinke. Zraven lahko postrežete tudi stepeno smetano. Ali pa palačinke postrežete kar s čokoladnim namazom ali sadnim džemom.
Odkriti srečo. Jo loviti in ujeti. Se prepustiti. Gledati z odprtimi očmi, vonjati, poslušati, se čuditi. Biti radoveden, ceniti lepoto in preproste, majhne in srčne stvari, srčne ljudi, trenutke. Čričke. Predvsem ne pozabi na čričke. Brez njih ni poletja.

Iskreno imam rada vse vrste palačink, od tistih babičnih tankih z marelično marmelado (ali pa jagodna + kisla smetana
Očitno se mi meša od ljubezni, ko pišem o palačinkah.
No ampak zadnje čase se res ful trudim jest karseda zdravo, zato moko nadomestim s pirino, kravje mleko s sojinim,... zdajle sem prvič slišala da lahko rumenjak izpustiš.
Plain Jane, ko si vprašala, če jih kdo dejansko je tako sem takoj vedela kaj misliš ker se jaz tudi vedno to sprašujem ob takih slikah in v filmih... in ne, ne jem jih tako.

makes 12 pancakes
2 cups whole wheat pastry flour
2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup brown sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
2/3 cup milk
1 tablespoon vanilla extract
3 large ripe bananas, mashed
2 tablespoons butter, melted
In a large bowl, combine flour, baking powder, sugar, salt, cinnamon, and nutmeg in a large bowl. Measure out the milk and add the vanilla extract to it. Whisk together the dry ingredients and add in milk and vanilla, stirring to combine. The mixture will still be dry. Add in mashed bananas and mix. Add in melted butter and stir until batter is somewhat smooth.
Heat a skillet or grilled on medium heat. Using a 1/3 cup measure, spoon batter into rounds and cook until bubbles form on top – about 2-3 minutes. Flip and cook for a minute or two more. Repeat with remaining batter. Serve hot with butter and syrup, or the vanilla maple glaze.
Note: if you don’t have/can’t find whole wheat pastry flour, use 1 cup of regular whole wheat and 1 cup of all purpose. Or 2 cups of all purpose.
Vanilla Maple Glaze
1/2 cup maple syrup
3/4 cup powdered sugar
1 teaspoon vanilla extract
Combine all ingredients in a bowl and stir until smooth. Pour over pancakes.

Whole Wheat Greek Yogurt Pancakes
makes about 15 pancakes
2 cups whole wheat pastry flour
2 teaspoons baking powder
1 1/2 teaspoons cinnamon
1/4 teaspoon salt
2 1/2 cups light (canned) coconut milk
1 6-ounce container plain, nonfat Greek yogurt
1 tablespoons vanilla extract
1 1/2 tablespoons honey
In a large bowl, whisk flour, baking powder, salt and cinnamon. Add milk, yogurt, vanilla and honey, whisking until smooth.
Heat a nonstick griddle or skillet over medium heat. Using a 1/4 cup measure, pour batter into rounds. Let cook until bubbles appear on the surface, about 3-4 minutes, then flip and cook for an additional 1-2 minutes. Serve with butter, syrup and fruit.
Note: these pancakes are fairly thin and not quick as fluffy as your typical pancakes. I find that they do not reheat very well (like the next morning), but are great when first made. You can replace the whole wheat pastry flour with all-purpose (do not use regular whole wheat), but you may have to decrease the coconut milk by 1/2-3/4 cup.

1 3/4 cups milk
1 1/2 teaspoons vanilla extract
contents of 1/2 vanilla bean
1/4 teaspoon cinnamon
2 cups frozen cherries

Stir together dry ingredients. Add eggs, milk, and vanilla. Fold in vanilla beans. Mix until dry ingredients are moistened. Chop 1 cup of cherries into fine pieces. You can either stir them into the batter (the pancakes will turn reddish-blue in color) or drop the cherries in the batter while each pancake is cooking. To cook, heat a griddle or skillet on medium heat and pout in 1/4 cup of batter. Flip once tiny bubbles appear on the pancakes.
Heat remaining cup of cherries in a saucepan or in the microwave. Mash with a fork and stuff in between pancakes and drizzle juice on top. Top with vanilla glaze.
Vanilla Bean Glaze
1 heaping cup of powdered sugar
1 1/2 teaspoons vanilla extract
1/4 cup heavy cream
2 1/2 tablespoons milk
contents of 1/2 vanilla bean
Add sugar to bowl and stir in heavy cream and vanilla until mixture resembles a thick batter. Add milk one tablespoon at a time, stirring until smooth – about 3-5 full minutes. Mixture may look lumpy at first but just continue to stir and it will come together. Fold in vanilla beans and pour over pancakes.

Red Velvet Pancakes
1½ cups minus 1½ tablespoons unsweetened vanilla almond milk
1 1/2 tablespoons vinegar
1/2 cup whole wheat flour
3/4 cup all purpose flour
1/2 cup granulated sugar
2 tablespoons cocoa powder
1/2 teaspoon baking powder
3/4 teaspoon baking soda
2 tablespoons red food coloring
1 tablespoon chocolate chips
Whisk together milk and vinegar and set aside to curdle.
In a mixing bowl, add wheat flour, all purpose flour, sugar, cocoa powder, baking powder and baking soda. Make a well in the center, and pour in milk mixture and food coloring. Mix until combined.
Preheat skillet or griddle on medium heat. Add 1/4 to 1/3 cup batter. Once bubbles form, gently flip and cook for a few more minutes.
Top with chocolate chips and cream cheese frosting.

White Chocolate Coconut Pancakes- OMG!
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons butter, melted
1/2 cup white chocolate morsels
1/2 cup coconut
1/4 cup toasted coconut
In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth. Fold in coconut.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Drop in white chocolate morsels. Flip when bubbles appear on the top. Brown on both sides and serve hot. Garnish with butter, syrup, and toasted coconut.
