@Coco, ostanek pire krompirja lahko daš v model za torto, ga namžeš z jajcem, podobno kakor, kaj jaz vem, torto. Nato ga daš pečt v ror.

Krompir - katera sorta je za kaj dobra?

Večina med nami sploh ne pozna več kot 2 sorti krompirja. In koliko je šele načinov priprave!
Veste kako je videti sorta Ditta, Julia, Nicola, Liseta, Cosima, Desiree... verjetno ne. Čeprav se sorte Adoru, Desiree, Cecile in še nekatere najdejo na prodajnih policah ali celo na naših vrtovih.

 


Večina med nami ima rad krompir, a še največ med nami razlikuje le rumenega in belega, rdečega gledamo že postrani. A krompirjev je toliko sort, da jih še vedno odkrivajo, in načinov priprave prav tako. Po navadi nam je prav vseeno, kateri krompir bomo uporabili za pripravo naših jedi, samo da je. A krompirji so si med sabo zelo različni. Trenutno je na voljo preko 5000 različnih sort krompirja, pri nas jih poznamo preko 150 sort. Sorte se delijo glede na različne kriterije. Nekoč so jih delili na zgodnji, srednji in pozni krompir, kasneje se je govorilo o belem, rumenem in rdečem krompirju...

 

 


Seveda  je ljubiteljem kuhinije v užitek delati najrazličnejše kulinarične poizkuse prav s krompirjem. Tako se glede na sorto ljubitelji odločajo za različno obravnavo in pripravo. Glede pire krompirja morami biti pozorni na trde, srednje in mehke sorte krompirja, prav tako nekatere sorte pri kuhanju razpadejo. Trde sorte so idealne za pripravo solat in prilog, srednje za ocvrt krompirček, mehke sorte pa so narejene za krokete in njoke ter testo.

 

 

 

  • Adora: je zelo zgodnja sorta krompirja, ki se dobro shranjuje. Ima ovalne gomolje, belo kožico in svetlo rumeno meso. Po kuhanju ima ta krompir vlažno, voščeno strukturo in se ne razkuha. Se lepo reže. Ta sorta je primerna za kuhanje, pečenje, praženje in tlačenje, posebej pa ga priporočajo za pripravo solat in prilog.
  • Bintje: je zelo stara in priljubljena sorta krompirja, ki ima ovalne gomolje s svetlo bledo kožico ter svetlorumenim mesom. Po kuhanju je ta krompir voščen ter še vedno čvrst. ta sorta je primerna za kuhanje, pečenje, cvrtje, posebej pa je primerna za pire krompir, čips in pomfrit.
  • Cleopatra: je zelo zgodnja sorta krompirja, ki dobro prenaša ozimnico. Pogosto ga jedo tudi kot mlad krompir. Ima manjše gladke, ovalne gomolje rdečkaste barve ter svetlorumeno meso. po kuhanju je vlažno voščeno čvrst, priporočajo pa ga predvsem za kuhanje, pečenje, praženje. Odličen je za pomfrit ni pa primeren za pire!
  • Courage: je srednje zgodnja sorta iz katere delajo industrijski čips. Ima okrogle gomolje, izrazito rdečo kožo in svetlorumeno meso. Po kuhanju je malce mokast, mehak in se rad razpada. Idealne je za pire in pečenje v pečici, posebno okusni pa so kroketi, njoki ter ocvrtki iz testa.
  • Desiree: je srednjezgodnja sort krompirja, ki ej idealna za ozimnico. Ima precej velike ovalne gomolje ter rdečkasto kožico. Meso je svetlorumene barve. Po kuhanju je malce voščen ter mokast, rad se razkuha a ostaja še vedno čvrst. Slovi pod imenom “rdeči krompir” in je primeren za kuhanje, peenje in praženje. Posebno ga priporočajo za pire, njoke, krokete, testo in čips.
  • Jaerla: je zelo zgodnja sorta krompirja, ki jo pogosto kupujemo kot mlad krompir. Ima velike, okrogle do ovalne gomoljez rumeno kožico ter svetlorumeno meso. Po kuhanju je vlženvoščene strukture, se ne razkuha in se ga lepo reže. Ta sorta je primerna za kuhanje, pečenje in praženje. Posebno ga priporočajo za krompirjevo solato, priloge, zloženke, musake ter kot pečen krpmpir v pečici.
  • Monalisa: je srednje zgodnja sorta, idealna za ozimnice, ima gomolje eliptične oblike, belo gladko kožo ter svetlorumeno meso. Po kuhanju je vlažno voščene strukture, se ne razkuha in je idealna sorta za kuhanje, pečenje, cvrtje, posebej pa primerna za solare, musake, zložence, pomfrit.
  • Liseta: je zgodnji krpmpir s srednje velikimi gomolji. Ima gladko belo kožo ter svetlorumeno meso. Po kuhanju je voščen ter nekoliko vlažen, ima slabo mokasto strukturo a je vseeno relativno trdo meso. Ta sorta krompirja je primerna za kuhanje, pečenje, praženje, priporočajo pa ga za pečenje v pečici, pireje in pomfrit.
  • Red Scarlet: je zgodnji krompir, ki ga kupujemo kot mladi krompir. Ima podolgovate gomolje, rdečo kožico in rumeno meso. Po kuhanju ta krompir ostane močno vlažen, voščen in trd. Ne rakuha se. Ta sorta je primerna za pečenje in praženje, posebno pa se priporoča za pečen krompir s kožico v pečici in kuhan za solato.

Imamo zvrhan krožnik pireja, ki je ostal od včerajšnjega kosila in sem razmišljala, da bi ga popekla v pečici s paradižnikom, sirom in začimbami, ampak imam nekaj v spominu, da naj se 'starega' krompirja ne bi pogrevalo. Anouk ali kdo drug, prosim za utemeljitev! :)

Kinky - kateri je že tisti recept za "dodole"? ko ga rabim, ga pa nikakor ne najdem.

Pa še enega imaš, ki ga full rada delaš.

pa kakšen krompir uporabiš za to. Mlad verjetno ne bo tako dober?

Uf, zdaj si me pa našla ... ne vem o katerem receptu je govora, najboljše, da na Kulinariki malo pobrskaš. Nikoli jih nisem delala, veš, sem jih pa vedno jedla v Prekmurju. 

 

Misliš to

 

Mlad je meni najboljši v pečici, zrezan na večje kose, niti lupiti ga ni treba, malo olivnega olja čez in sol, ter kakšna sveža zelišča. Čista zmaga. Malo kečapa in majoneze lahko za zraven. :)

Še rezultat: SUPER dobro je, kar ni težko verjeti, glede na to, da so sestavine krompir, sir in kisla smetana. laugh.gif

Jaz sem priredila recept zgoraj, in zopet ničesar tehtala, vse od oka.

  • krompir sem zavila v folijo in ga pekla na 220 stopinj eno uro (kot na sliki) - lahko ga pa skuhate, rezultat je isti
  • nato sem ga vzela iz pečice in ga OLUPILA, narezala na koščke (kot za pražen krompir), in pustila, da se je ohladil
  • dodala sem poper + sol, mlado čebulo, kislo smetano in nariban sir
  • dala v pekač, po vrhu potresla še malo sira in drobnjak
  • pekla 40 minut na 170

tole sem delala čez vikend. Nekje sem ga morala usrat, saj je bil okoli že preveč pečen, notri pa surov ... in tudi po pomoti se ni tako lepo razprl - vse je bilo skupaj zlepljeno (zato tudi surovo).

 

Pa full je obetalo!

Si ga olupila? Za hasselback je lažje, če ga ne olupiš pa res moraš skoraj do konca zrezati pa čisto na tanko. Mislim tudi, da je 40 minut premalo, vsaj kakšno uro ga je treba peči. Dober trik je recimo ta, da ga spodaj, kjer bo stal, ravno odrežeš. Saj receptov za ta krompir je ogromno, en ti bo zihr uspel :D

ja, jaz sem ga olupila, ker je bil večji, sem ga dala na pol po dolžini in ga narezala na čisto tanko in skodaj do konca.

Ja, na koncu (ko se bil vmes surov) sem pa pač do konca prerezala in smo imeli "čips".

Pekla sem v ventilatorski na 200°C, pa je bilo očitno še preveč, saj je bil zgoraj že malo trd (suh).

Ok, bom še kdaj poskusila... hvala za pogum!

Jaz ga nisem kupila, nastalo je pa to:

Še recept, sem ti ga prevedla:

 

Za 4 osebe:

 

  • 8 krompirjev
  • 40 gramov masla, stopljenega, plus dodatno maslo, da boš vmes malo namazala :)
  • sol in poper

 

Postopek:

 

  1. Pečico segreješ na 200 stopinj C, namastiš posodo, v kateri boš pekla. OLUPI in UMIJ krompir in jih posuši s papirnatimi brisačami. Z ostrim nožem nareži krompir na intervale (3 milimetre), ampak pazi, da ne prerežeš 'do konca'.
  2. Krompir položiš v posodo, narezan del na vrh, premažeš s stopljenim maslom in začiniš s soljo in poprom. V vroči pečici nato pečeš krompir cca 50 minut, dokler ni zlate barve. Občasno premažeš z maslom.
  3. Žreš. :D

Ow ki. Srečno. :) Na koncu ga lahko premažeš z mešanico masla/olja in na drobno sesekljanega česna in peteršilja.  :eat:

Vse vrste krompirja so dobre  :eat: , ampak najboljši je pa kifelčar. Danes sem ga naredila pečenega v pečici, nisem ga lupila, narezala na krhlje, pokapljala z nekaj olja,

 

potresla s sesekljanim svežim peteršiljem ter dodala še sol, poper in rdečo papriko v prahu. Nekaj najboljšega.

 

Kupila sem ga v Leclercu, in je malo dražji, ampak se splača. :)
